Cool Celery Pockets
Serves 1

1 pita pocket bread
1/2 cup Texas lettuce or sprouts
2 T. of Texas celery, chopped
2 T. of the following: chopped Texas tomatoes, cucumbers, mushrooms or apples
2 T. low fat cheese, shredded
2 T. of lean chicken
2 T. salsa
Low fat mayonnaise (optional)

Wash vegetables and fruit well.

Cut the pita bread in half and open the pocket. Stuff with suggested fillings.
