Sunshine Salad
Serves 5
5 cups of packed Texas spinach leaves, washed and dried well
1/2 Texas red onion, sliced thin
1/2 Texas red pepper, sliced
3/4 Texas cucumber, sliced
2 Texas oranges, peeled and chopped into bite-sized pieces
1/3 cup of light vinaigrette dressing
Toss all ingredients together in a large bowl. Add dressing and toss again. Serve immediately.
